Watermelon Arak with Halloumi

A bold, herbaceous gin cocktail paired with spice-dusted feta for a mezze-inspired bar experience!
This Eastern Mediterranean pairing brings together a zesty gin cocktail infused with za’atar and a trio of feta cubes rolled in classic Levantine spices. It is a sophisticated, savoury combination ideal for cocktail menus, aperitif service, or as a signature welcome pairing.

 

Ingredients

  • For the Watermelon Arak Cocktail:

    • 4 cups seedless watermelon, cubed
    • ¼ cup fresh lemon juice
    • ½ cup Arak
    • 1 tbsp honey (optional, for added sweetness)
    • Ice cubes
  • For the Skewers:

    • 200 g Halloumi cheese, cut into cubes
    • Watermelon slices (small wedges or cubes)
    • Fresh mint leaves
    • Wooden skewers

Directions

  1. In a blender, combine the watermelon cubes, lemon juice, Arak, and honey (if using). Blend until smooth.
  2. Fill serving glasses with ice and pour the watermelon-Arak mixture over top.
  3. Thread each skewer with one cube of Halloumi, a small watermelon slice, and a mint leaf.
  4. Garnish each cocktail glass with a prepared skewer.
  5. Serve immediately as a refreshing savoury-sweet pairing.
