Za'atar Gin with flavoured Feta

A bold, herbaceous gin cocktail paired with spice-dusted feta for a mezze-inspired bar experience!
This Eastern Mediterranean pairing brings together a zesty gin cocktail infused with za’atar and a trio of feta cubes rolled in classic Levantine spices. It is a sophisticated, savoury combination ideal for cocktail menus, aperitif service, or as a signature welcome pairing.

 

Ingredients

  • For the Za’atar Gin Cocktail:

    • 2 oz gin
    • 1 oz fresh lemon juice
    • 1 oz simple syrup (1:1 sugar to water)
    • ½ tsp za’atar
    • Ice cubes
    • Club soda (to top)
    • Fresh oregano and thyme sprigs (for garnish)
    • Lemon slice (for garnish)   
  • For the Flavoured Feta:

    • 400 g Feta cheese, cut into cubes
    • 1 tbsp za’atar
    • 1 tbsp sumac
    • 1 tbsp ground cumin
    • Olive oil (for drizzling)

Directions

  1. In a shaker, combine the gin, lemon juice, simple syrup, and za’atar.
  2. Fill with ice and shake vigorously until well chilled.
  3. Strain into a glass filled with fresh ice and top with a splash of club soda.
  4. Garnish with sprigs of oregano and thyme, and a lemon slice.
  5. Divide the Feta cubes into three equal portions.
  6. Roll one portion in za’atar, one in sumac, and one in ground cumin.
  7. Arrange the seasoned Feta cubes on a small plate and drizzle lightly with olive oil.
  8. Present the gin cocktail alongside the spiced Feta cubes as a pairing.
