Ricotta Sandesh

Add a refined finish to your dessert menu with this Ricotta sandesh, offering a smooth, delicate texture complemented by aromatic cardamom, crunchy pistachios and fragrant rose petals. Light yet flavourful, it brings an elegant, modern touch to traditional sweets.

 

Ingredients

  • 1½ cups Ricotta

  • 2½–3 tbsp Fine Sugar

  • ¼ tsp Freshly Ground Cardamom

  • 1 tsp Unsalted Butter

  • Pistachios, crushed

  • Dried Edible Rose Petals

Directions

  1. Place the Ricotta in a wide pan over low heat and spread it out to increase surface area.
  2. Cook gently, stirring often, until excess moisture evaporates and the ricotta becomes slightly grainy but remains soft.
  3. Add the sugar and continue cooking, stirring continuously, until the mixture loosens briefly and then thickens again into a cohesive mass.
  4. Stir in the cardamom and butter, then remove from heat once the mixture holds together without sticking.
  5. Transfer to a plate and let cool until just warm.
  6. Knead lightly with the heel of your hand for a few seconds to smooth the texture.
  7. Divide into portions, shape as desired.
  8. Garnish lightly with pistachios and dried edible rose petals.
