Cottage Cheese Shepherd's Pie

Featuring Cottage Cheese, Extra Old Cheddar, and Parmesan cheese, this elevated shepherd’s pie brings added richness, flavour, and protein to a familiar favourite. Ideal for high-volume service, it offers broad customer appeal, make-ahead convenience, and consistent execution across a variety of menu settings.

Ingredients

Filling

  • 30 mL Olive Oil
  • 350g Ground Beef
  • 90g Onion, diced
  • 65g Celery, diced
  • 50g Carrots, diced
  • 45 g Mushrooms, sliced
  • 10 g Garlic, minced
  • 40g Tomato Paste
  • 350mL Low-Sodium Beef Stock
  • 5 mL Worcestershire Sauce
  • 2 g Dried Thyme
  • Salt and Black Pepper, to taste

Potato Filling

Corn Layer

  • 350 g Corn Kernels
  • 100 g Roasted Red Peppers
  • 210 g Cottage Cheese
  • 2 g Smoked Paprika

Finish

Directions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a pan. Cook the ground beef, onion, celery, carrots, mushrooms, and garlic until browned. Add tomato paste, beef stock, Worcestershire sauce, thyme, salt, and pepper. Simmer until thickened.
  3. Cook the potatoes until tender, then mash with Cottage Cheese and Extra Old Cheddar.
  4. Blend the corn, roasted red peppers, Cottage Cheese, and smoked paprika until combined.
  5. Layer the meat filling, potato mixture, and corn mixture in a baking dish.
  6. Top with Parmesan Cheese and Panko Bread Crumbs.
  7. Bake for 40-45 minutes, uncovering for the final 10 minutes, until golden brown.
  8. Let stand for a few minutes before serving.
