When Cheese Meets Gyro and Shawarma

Take your street-food game to the next level with this interactive tableside feast! 
This shareable lunch feast features a sizzling gyro skewer layered with beef and chunks of Halloumi cheese, paired with a creamy Sour Cream tzatziki. Alongside, a skewer of chicken shawarma stacked with melted Provolone cheese is served with rich Ricotta Lebanese-style garlic sauce. 
Complete the experience with classic gyro and shawarma sides, warm pita, and bold flavours that will keep customers coming back for more. 

 

Ingredients

  • Halloumi Beef Gyro:

    • 1 kg Beef, thinly sliced
    • 200 g Halloumi cheese, sliced
    • 2 tbsp Olive oil 
    • 1 tbsp Oregano, dried 
    • 1 tbsp Thyme, dried
    • 1 tsp Garlic powder
    • Salt and Pepper to taste 

  • Sour Cream Tzatziki:

    • 1 cup Sour Cream
    • 1 Cucumber, grated and drained
    • 2 Cloves of garlic, minced
    • 1 tbsp Olive oil 
    • 1 tbsp Lemon juice 
    • Salt to taste

  • For the sides:

    • Greek pita bread 
    • Tomatoes, sliced 
    • Red onion, thinly sliced 
    • Cucumber pickles, sliced 

  • Provolone Chicken Shawarma:

    • 1 kg Chicken thighs, thinly sliced
    • 200 g Provolone cheese, thickly sliced 
    • 2 tbsp Olive oil
    • 1 tbsp Cumin powder 
    • 1 tbsp Coriander powder 
    • 1 tsp Paprika powder
    • 1 tsp Turmeric powder
    • 1 tsp Garlic powder
    • Salt and Pepper to taste

  • Ricotta Lebanese-style Garlic Sauce:

    • 1 cup Ricotta
    • 1 tbsp Mayonnaise
    • 4 Cloves of garlic, minced
    • 2 tbsp Lemon juice
    • 1/4 cup Olive oil
    • Salt to taste

  • For the sides:

    • Lebanese pita bread
    • French fries 
    • Turnip pickles 
       

Directions

Halloumi Gyro and Sour Cream Tzatziki

  1. Marinate the meat with olive oil, oregano, thyme, garlic powder, salt, and pepper. Let it sit for at least 1 hour.
  2. Layer the meat and Halloumi cheese alternately on a skewer or rotisserie spit.
  3. Cook on a grill or in an oven at 200°C (392°F) until the meat is cooked through and the cheese is golden brown.
  4. Mix all the tzatziki ingredients in a bowl and refrigerate until ready to serve.
  5. Arrange the cooked gyro meat and Halloumi on a large serving platter.
  6. Place the pita bread, tomatoes, onions, pickles, and tzatziki on the side.
     
Provolone Chicken Shawarma and Ricotta Lebanese-style Garlic Sauce


  1. Marinate the chicken with olive oil, cumin, coriander, paprika, turmeric, garlic powder, salt, and pepper. Let it sit for at least 1 hour.
  2. Layer the chicken and Provolone cheese alternately on a skewer or rotisserie spit.
  3. Cook on a grill or in an oven at 200°C (392°F) until the chicken is cooked through and the cheese is melted.
  4. Prepare the Ricotta garlic sauce: Blend all the garlic sauce ingredients until smooth and creamy. Refrigerate until ready to serve.
  5. Arrange the cooked chicken shawarma and Provolone on a large serving platter.
  6. Place the pita bread, french fries, turnip pickles, and Ricotta garlic sauce on the side.
