Sweat some garlic and shallots in a pan with olive oil. Add plant-based cream and Vitalite Plant-Based Mozzarella Flavoured Shreds. Stir until fully incorporated and thick. Add the pesto to the sauce.
Add cooked gnocchi to the sauce. Top with toasted breadcrumbs, pickled basil, olive oil and chives to serve.
