Swiss Cheese Fondue Poutine

Directions

Season the fries with ground paprika while they are still warm. Top with Swiss cheese sauce, then garnish with julienne-cut smoked ham and mushrooms. Add more sauce and sprinkle with Swiss cheese shred and green onions. Finish with a light dusting of ground paprika.

Swiss cheese is naturally lactose-free, making this poutine ideally suited for a lactose-intolerant clientele.

Go one step beyond: To prepare the Swiss cheese sauce, bring beer to a boil. Lower the heat. Mix the Swiss cheese shred with cornstarch and add the mixture into the beer one handful at a time. Simmer for 5 minutes while stirring continuously until the sauce becomes smooth and thick. Season to taste with Dijon mustard, Worcestershire sauce and paprika.
