Sfeeha Pizza with Ayran

Sfeeha pizza just got an upgrade! This twist on the Levantine classic brings together spiced ground meat, fresh herbs, and crumbled Feta cheese, adding a rich and creamy balance to every bite. Served with a chilled glass of Ayran, it is a crowd-pleaser that stands out on any menu, easy to prepare, full of flavour, and perfect for sharing. 

 

Ingredients

  • Sfeeha Pizza:

    • 3 portions Sfeeha or Pizza dough
    • 165 g Ground beef or lamb
    • 20 g Red onion, brunoise 
    • 2 g Kosher salt
    • 5 g Fresh parsley, chopped
    • 2 g Fresh mint, chopped
    • 10 g Tomato, brunoise 
    • 6 g Pomegranate molasses
    • 5 g Crumbled Feta cheese 

  • Aryan Drink:

    • 1 cup Greek yogurt
    • 1 cup Water, cold
    • 1/2 tsp Salt (adjust to taste)
    • Ice cubes (optional)
    • Fresh mint leaves (for garnish, optional)

  • Garnish:

    • 5 g Fresh pomegranate seeds
    • 3 g Tahini, drizzled
    • 3 g Pomegranate molasses, drizzled
    • 2 g Red onion, thinly sliced
    • 2 g Fresh mint, chopped
    • 2 g Fresh parsley, chopped
    • 2 g Micro cilantro
    • 4 g Crumbled Feta cheese

Directions

Sfeeha Pizza

  1. In a bowl, combine all ingredients and mix well with your hands until all is incorporated. 
  2. On a floured surface, stretch out the dough, and create a crust about 1/2 inch thick. 
  3. Press the meat mixture around the pizza (leaving the crust open) and fully cover, making sure it is flat on the pizza dough.
  4. Drizzle some olive oil around the crust and coat with your fingers. 
  5. Cook in a pizza oven until crust is cooked and crispy (can be done in a regular oven as well). 
  6. Once cooked, allow to rest for a minute and top with all the garnish ingredients. 
     
Aryan Drink


  1. In a blender, combine the yogurt, cold water, and salt.
  2. Blend until smooth and frothy.
  3. If you prefer a colder drink, add a few ice cubes and blend again.
  4. Pour the Ayran into two glasses.
  5. Garnish with fresh mint leaves.
