Ricotta Affumicata

Ingredients

Whipped Ricotta Base:

  • 1 ½ cups Ricotta
  • 2 tbsp Olive Oil
  • ½ tsp Kosher Salt

 

Topping:

  • Extra Virgin Olive Oil
  • Fig
  • To taste, Parsley

 

Serve With:

  • Grilled Ciabatta

Directions

  1. In a food processor, whip ricotta, olive oil, and salt until light and fluffy. Spread in a serving dish.
  2. Drizzle with olive oil, sprinkle with parsley, and place fig on top.
  3. Under a bell or other display, smoke the Ricotta with a smoking gun for a few minutes.
  4. Pair with warm bread and serve as is for a spectacular display.
