Fior di Latte and Pancetta Flower

Twirl‑ready linguini aglio olio sets the stage for a show‑stopping Fior di Latte “flower” wrapped in prosciutto petals—a tableside moment that’s pure ooh‑and‑ahh. As the warm cheese melts into the noodles, it turns silky and rich, taking a familiar favourite from cozy to crush‑worthy.

Ingredients

  • 1 ball Fior di Latte Cheese
  • To taste, Parmesan Cheese
  • 3 slices Pancetta
  • 180 grams of Linguini
  • 4 tbsp Extra Virgin Olive Oil
  • 4 cloves Garlic
  • 2 tsp Red Pepper Flakes
  • To taste, Fresh Parsley, chopped
  • To taste, Lemon Zest

Directions

Linguini

  1. Bring a large pot of salted water to a boil and cook the linguini until al dente.

 

Fior di Latte Cheese Flower

  1. Preheat oven to 375°C.
  2. On a baking pan, lay 3 slices of pancetta and cook for 5 minutes. Remove the pancetta and place in an oven-safe bowl, arranging the slices in a flower shape.
  3. Place the Fior di Latte ball in the centre of the pancetta. Return to the oven and cook for another 10 minutes, or until the cheese is slightly melted.

 

Aglio Olio Sauce

  1. In a large skillet, heat olive oil over medium-low. Add sliced garlic and sauté until golden. Stir in red pepper flakes.

 

Combine

  1. Add linguini and toss to coat.
  2. Stir in parsley and lemon zest.
  3. Sprinkle with Parmesan cheese.
  4. Create a nest and top with Fior di Latte Flower.
