Egg, Ricotta & Asiago Breakfast Casserole


Mixing and matching cheeses makes for a deliciously complex dish, so this recipe inspiration experiments with complementary flavours. Sauté spicy Italian sausage, diced red and green bell peppers, onions, tomatoes, garlic, and oregano in some olive oil, then toss in some fresh spinach, salt, and pepper once the heat is off. Transfer the mix to a baking dish, then create 4 wells with the back of a spoon: crack an egg into 2 of them and spoon some rich ricotta into the others. Sprinkling shredded Asiago cheese on top will offer the perfect fruity, slightly sharp counter-balance to ricotta’s creaminess!

Cook the sausage and veggie mix in advance for quicker prep, or if you want to spin this dish into a meal kit. Simply place the cooled sausage mixture into a 10oz aluminum takeout container, then make the wells and add the eggs, ricotta, and asiago. Provide instructions for baking at home.
