Colourful Vegan Lettuce Rolls


Roll with the trends thanks to this delicious wrap inspiration made with Plant-Based Mozzarella Flavoured Shreds for a dash of saltiness and a delicious creamy texture. Simply overlap lettuce leaves on a piece of parchment paper, top with your choice of condiments and then fill with veggies­ and legumesblack beans, roasted corn, cherry tomatoes, avocado, roasted bell peppers, cucumbers. Using the parchment paper, roll as tight as possible, taking care to fold in the ends halfway through. To serve, slice in two and secure with picks to prevent from unfolding. Save on time and labour by prepping this light lunch idea in advance and storing it in the fridge.
