Chicken & Raclette Naan-wich

Ingredients

Main Components

  • 1 piece Naan
  • 50 ml Spicy Garlic Tahini Sauce
  • 150 gr Chicken Shawarma
  • 3 slices Raclette Cheese
  • 25 gr Sun-Dried Tomatoes
  • 25 gr Pepperoncini Peppers
  • 25 gr Pickled Red Onions
  • 1 pinch Microgreens
  • 1 pinch Sesame seeds

Chicken Shawarma

  • 675 gr Chicken Thighs
  • 75 ml Yogurt
  • 50 ml Extra Virgin Olive Oil
  • 6 cloves Garlic, minced
  • 2 each Shallots, minced
  • 1 Tbsp Smoked Paprika
  • 2 tsp Oregano
  • 0,5 tsp Turmeric
  • 2 tsp Salt

Spicy Garlic Tahini Sauce

  • 125 ml Tahini
  • 25 ml Lemon Juice
  • 5 ml Honey
  • 2 cloves Garlic, minced
  • 1 each Jalapeno, seeded & chopped
  • 25 gr Parsley, chopped
  • 5 gr Salt
  • 75 ml Water

Pickled Red Onions

  • 500 gr Red Onion, julienne
  • 250 ml Cider Vinegar
  • 1 Tbsp Salt
  • 2 Tbsp Brown Sugar
  • 1 pinch Chili Flakes

Directions

  1. Char both sides of the naan on a charbroiler until it is hot and marked with grill lines.
  2. Lay the naan on a small baking sheet, spread with half the garlic tahini sauce, add sundried tomatoes, pepperoncini peppers, then the chicken.
  3. Heat the Raclette cheese. Once fully melted, add the slices of cheese to the sandwich.
  4. Arrange pickled onions and microgreens along the top.
  5. Serve the naan-wich folded in half or left flat.
