Mozzarella-Stuffed Chicken Wrapped in Prosciutto

This juicy chicken wrapped in crispy prosciutto hides a molten Pizza Mozzarella center with roasted peppers and sundried tomatoes for a rich, indulgent bite. Easy to execute, impressive on the plate, and premium‑priced, this is the kind of dish that gets added to the menu and quickly becomes a guest favourite.

Ingredients

  • 1 piece Chicken Breast

  • 50 gr Pizza Mozzarella Cheese, cubed

  • 25 gr Sun-Dried Tomatoes, strips

  • 25 gr Roasted Red Peppers, strips

  • 1 sprig Basil, chiffonade

  • 2 slices Prosciutto

  • 25 ml Extra Virgin Olive Oil

  • 1 pinch Salt & Pepper

Directions

  1. Using a paring knife, slice from the side through the centre of the chicken breast to make a pocket (without cutting all the way through).
  2. Fill the pocket with the Pizza Mozzarella cheese, sun-dried tomatoes and roasted peppers. Season the chicken with salt and pepper.
  3. Lay the slices of prosciutto slightly overlapping on the work surface, then place the chicken on top and wrap the prosciutto around it.
  4. Heat olive oil in a large skillet over medium-high heat. Cook chicken breast for about 5 minutes, turning frequently until browned on all sides.
  5. Transfer to 180°C oven and bake a further 8–10 minutes, or until chicken is cooked through.
  6. Remove from oven and rest chicken on a wire rack for 5 minutes.
  7. Slice chicken on a bias and serve with roasted vegetables or over your favourite pasta.
