Waffle Fries Poutine Stack

Meet the Waffle Fries Poutine Stack. Layers of crispy waffle fries, savoury back bacon, and buttery Monterey Jack Cheese with Jalapeño are stacked and drizzled with rich Mild Yellow Cheddar Cheese Shred sauce then finished with crunchy onions. 


  • 6 pcs Waffle Fries
  • 3 pcs Back Bacon, ¼’d
  • 3 slices Monterey Jack Cheese with Jalapeño
  • 2 stalks Green Onions, sliced

Cheesy Gravy

  • 100 ml Bechamel Sauce
  • 50 g Mild Yellow Cheddar Cheese Shred

Crispy Onions

  • 100 g Onions, finely sliced
  • 25 g Cornstarch
  • A pinch Salt


  1. Begin by warming up the bechamel sauce and stirring in the Mild Yellow Cheddar Cheese until smooth. Keep it warm until ready to use.
  2. Slice the onions very thinly, ideally using a mandolin. Coat them with cornstarch and deep fry until crispy. After removing them from the fryer, sprinkle salt over them while they are still warm.
  3. Deep fry the waffle fries following the standard procedure. Once cooked, take them out of the fryer and place them on a surface. Top each fry with approximately half a slice of Monterey Jack Cheese with Jalapeño of similar size and allow it to melt.
  4. Brown the back bacon on a griddle.
  5. Assemble the dish by layering cheese-covered waffle fries, crispy onions, and back bacon alternately.
  6. Pour the cheesy gravy over the stack and garnish with green onions.
