Vegetarian Tartare with Feta and Goat Cheeses

The salty taste of the Feta cheese and the rich texture of the Soft Fresh Goat cheese go amazingly well with the freshness of the watermelon in this innovative vegetarian tartare.

Combine Feta and Soft Fresh Goat cheeses with watermelon, tomatoes, green onions, olive oil, red wine vinegar, parsley and salt. Top with marinated veggies and drizzle with a vinaigrette made of lemon juice, olive oil and salt. Add ground toasted pistachios. Serve with chips, toasted bread or crackers.

For takeout, serve in a round container. You can even use it as a mould and build your tartare directly in the container for a quick prep with impeccable results.
