Queso Loco Taco

Crispy cheese shell, bold flavour, no compromise!
Pizza Mozzarella cheese replaces Oaxaca to create a golden, griddled shell, while Feta and Parmesan cheeses stand in for Cotija. Packed with refried beans, pickled vegetables, and avocado crema, this taco delivers serious flavour and crunch with minimal effort. It is a high-impact, low-effort dish that is built for menus that aim to stand out.

Serve with a chilled Jamaica Water to complement the richness of the cheeses.

 

Ingredients

  • Main Components:

    • 6 Each 6″ Corn Tortillas
    • 300 g Pizza Mozzarella Cheese, shredded
    • 300 g Feta Cheese, crumbled
    • 200 g Parmesan Cheese, grated
    • 250 g Refried Beans
    • 150 g Pickled Cabbage and Onions 
    • 150 ml Avocado Crema     
  • Avocado Crema:

    • 500 g Avocado Pulp
    • 250 ml Sour Cream
    • 1 Pinch Fresh Cilantro
    • 25 ml Lime Juice
    • 1 tbsp Salt
  • Pickled Cabbage and Onions:

    • Pickled Cabbage and Onions 
    • 1 Head Cabbage, shredded
    • 1 Red Onion, julienned
    • 250 ml Cider Vinegar
    • 250 ml Water
    • 25 g Sugar
    • 25 g Salt

Directions

  1. On a hot griddle, place the shredded Pizza Mozzarella cheese in six evenly spaced circles. Allow the cheese to melt and begin to bubble.
  2. Place one corn tortilla on top of each melted cheese circle. Continue cooking until the cheese is golden brown and crisp around the edges.
  3. While the tortillas are cooking, gently heat the refried beans until warm and spreadable.
  4. Once the cheese is browned and the tortillas are ready, remove them from the griddle. Spread a layer of refried beans on the inside of each tortilla.
  5. Fold each tortilla in half with the crispy cheese side out. Fill with pickled cabbage and onions.
  6. Top with a drizzle of avocado crema and a generous sprinkle of Feta cheese crumbles and grated Parmesan cheese.
  7. Serve immediately while warm and crispy. Pair with a chilled Jamaica Water to balance the richness of the cheeses.
