Pesto Chicken Burger

A fresh and flavourful twist on the classic chicken burger, this creation features a juicy ground chicken patty enhanced with Parmesan and garlic, layered with Pizza Mozzarella cheese slices, tomato, and red onion. Finished with a vibrant pesto spread on a toasted brioche bun, it’s a standout option for summer menus or lighter fare with gourmet appeal.

Ingredients

  • 115 g Ground Chicken

  • 1–2 tbsp Breadcrumbs

  • 1 tbsp Grated Parmesan Cheese

  • Salt and freshly ground Black Pepper, to taste

  • ½ Clove Garlic, minced (optional)

  • 1 tsp Olive Oil (for cooking)

  • 4 slices Pizza Mozzarella Cheese 

  • 1 Brioche Bun, halved and toasted

  • 1 slice Tomato

  • A few slices Red Onion

  • 1 leaf Lettuce

  • 1 tbsp Pesto

Directions

  1. In a small bowl, combine ground chicken, breadcrumbs, Parmesan, salt, pepper, and garlic (if using). Mix until well combined and shape into one patty.
  2. Heat olive oil in a skillet over medium heat. Cook the patty for 5–6 minutes per side, or until golden brown and fully cooked through.
  3. Toast the brioche bun lightly on the grill or in a toaster.
  4. Spread pesto on the bottom half of the bun.
  5. Place the lettuce leaf on the bottom bun, followed by the chicken patty.
  6. Top the patty with four slices of Pizza Mozzarella, then add the tomato and red onion slices.
  7. Cover the burger with the top half of the bun.
  8. Serve immediately with a side of crispy onion rings and a refreshing basil lemonade or basil mojito.
