Lobster Poutine

This delightful twist on the traditional Canadian comfort dish brings a hint of the ocean to restaurant offerings. Crispy poutine fries are layered with delicate slightly flaky Cheese Curds and are complemented by a rich brown butter and White Cheddar Cheese Shred sauce.


  • 250 g Thick Cut Fries
  • A pinch Old Bay Seasoning
  • 125 g Cheese Curds
  • 125 g Lobster Meat
  • 25 g Butter
  • A pinch Chives, chopped

Brown Butter Cheese Sauce

  • 50 g Butter
  • 1 clove Garlic, minced
  • 50 ml All Purpose Flour
  • 150 ml Seafood Stock
  • 150 ml Milk
  • 250 g White Cheddar Cheese Shred
  • 1 tsp Old Bay Seasoning
  • Salt and Pepper, to taste


  1.  Melt the butter in a medium saucepan over medium-low heat until it turns golden brown.
  2. Add the garlic and cook until fragrant.
  3. Whisk in the flour and cook for 2 minutes, then gradually whisk in the stock and milk.
  4. Stir the mixture frequently until it gently simmers and thickens, which usually takes about 3-5 minutes.
  5. Once thickened, incorporate the White Cheddar Cheese Shred and Old Bay seasoning. Adjust the seasoning to taste and keep warm until ready to use.
  6. Warm the lobster meat slowly in butter until heated through, ensuring the meat is evenly coated.
  7. Prepare the fries according to the standard recipe, then transfer to a mixing bowl and toss with Old Bay seasoning and Cheese Curds.
  8. Place the seasoned fries in a serving dish and top with the warmed lobster meat.
  9. Pour a generous amount of the brown butter cheese sauce over the dish.
  10. Garnish with chopped chives before serving.
