With its distinctive taste, Gorgonzola cheese is the star of this creamy pasta dish.
Sauté onion, chopped walnuts, pepper and ground chili pepper. Add chopped kale and some of the gnocchi cooking water, then bring the mixture to a boil. Over low heat, stir in the Gorgonzola cheese and garlic butter followed by the gnocchi. Garnish with pieces of Gorgonzola cheese or shavings of Parmigiano Reggiano cheese.
For an even richer dish, replace the cooking water with cooking cream. For a slightly tangy taste, opt instead for sour cream.
