Fajita Chicken Cheese Melt

Ingredients

  • Fajita Mix:

    • 1 kg Chicken Breasts
    • 1 Each Red Pepper, julienned
    • 1 Each Yellow Pepper, julienned
    • 1 Each Red Onion, julienned
    • 100 g Black Beans
    • 100 g Corn
    • 150 ml Salsa
    • 300–400 g Pizza Mozzarella, shredded
    • 50 ml Olive Oil
    • 50 ml Lime Juice
    • 10 ml Honey
    • 10 ml Chili Powder
    • Pinch Salt & Pepper
    • 1 tsp Each Cumin, Paprika, Onion Powder, Garlic Powder
  • Garnishes:

    • 12 Each Flour Tortillas, warm
    • 150 ml Guacamole
    • 150 ml Sour Cream
    • 1 Sprig Cilantro

Directions

  1. In a large bowl, combine olive oil, lime juice, honey, chili powder, cumin, paprika, onion powder, garlic powder, salt, and pepper.
  2. Add the chicken breasts and toss to coat. Let marinate for at least 30 minutes.
  3. In a hot skillet or griddle, sear the marinated chicken until golden and cooked through. Remove and slice.
  4. In the same pan, sauté the red pepper, yellow pepper, and red onion until slightly softened.
  5. Add the black beans, corn, and salsa. Stir to combine and heat through.
  6. Return the sliced chicken to the pan and mix with the vegetables.
  7. Sprinkle shredded Pizza Mozzarella evenly over the mixture. Cover and let melt until gooey and fully incorporated.
  8. Spoon the cheesy fajita mix onto a serving platter or individual plates.
  9. Serve with warm flour tortillas, guacamole, Sour Cream, and fresh cilantro.
