Chicken Mole Pizza with Sir Laurier D'Arthabaska


Combining soft washed rind Sir Laurier d'Arthabaska and Pizza Mozzarella cheeses make for a rich and savoury Mexican-influenced pizza. This inspiration is the perfect example, as these cheeses pair remarkably well with the deep, earthy taste of the mole sauce.

Spread mole over the dough. Cover with shredded cooked chicken coated in the same sauce. Add red onions and roasted corn before sprinkling with chopped cilantro. Evenly cover with Pizza Mozzarella cheese plus thinly sliced Sir Laurier d'Arthabaska cheese and bake. Garnish with cilantro, drizzle with crema—sour cream mixed with lime zest and juice—and serve.

For quick and easy grab-and-go options, this versatile inspiration can be made into a Calzone or a Stromboli. Swapping the chicken for pulled pork would also give this dish a meatier feel, while using jackfruit can turn it into a vegetarian option.
