Baba Ghanouj with Tuma salad

A creamy, smoky base meets a fresh, savoury cheese salad for a unique mezze experience!
Inspired by traditional Levantine flavours, this dish blends Baba Ghanouj with Ricotta for added richness, then tops it with a vibrant salad of Tuma cheese, tomatoes, and green onions. The result is a layered appetizer that’s both rustic and refined—perfect for modern Mediterranean menus or vegetarian offerings.

 

Ingredients

  • 150 g of your restaurant’s Baba Ghanouj or high-quality ready-made Baba Ghanouj

  • ½ cup Ricotta 

  • 100 g Tuma cheese, cut into small cubes

  • 1 medium tomato, diced

  • 2–3 green onions, finely chopped

  • Fresh mint leaves, chopped (for garnish)

  • Olive oil, for drizzling

Directions

  1. In a bowl, mix the Baba Ghanouj with the Ricotta until smooth and well combined.
  2. In a separate bowl, combine the Tuma cheese cubes, diced tomato, and chopped green onions.
  3. To assemble the dish, spread the Baba Ghanouj mixture in a shallow serving dish.
  4. Top with the Tuma cheese salad.
  5. Drizzle with olive oil and garnish with chopped mint leaves. Serve immediately.
