Mediterranean Feta Tagliatelle

A true comfort dish with a Greek twist! Velvety tagliatelle is coated in a rich, creamy Feta sauce and topped with a perfectly poached egg for added indulgence. The bold flavour of Feta cheese shines in every bite, making this a must-have for chefs looking to bring something new yet familiar to their menu. 

 

Ingredients

  • 500 g Tagliatelle
  • 250 g Goat Milk Feta Cheese
  • 180 ml Fresh milk
  • 1 large Egg
  • 1/4 tsp White pepper
  • 1/4 tsp Nutmeg
  • 1 tbsp Extra virgin olive oil
  • 1 tbsp Butter
  • Freshly ground black pepper
  • Salt 
     
  • For serving:

    • 4 Eggs, soft-boiled or poached 
    • Black pepper, freshly ground
    • 2 tbsp Grated rusk, optional

Directions

  1. Boil the tagliatelle in plenty of salted water. 
  2. In a blender, puree the Milk and Feta cheese until creamy. 
  3. Add the egg, nutmeg, white pepper, olive oil, and salt (optionally) and continue beating for 10 minutes. Drain the tagliatelle.
  4. In a large frying pan, heat the butter, add the tagliatelle and pour in the feta sauce. Stir until the sauce thickens, then add freshly ground pepper.
  5. Serve the tagliatelle by placing a whole egg on each plate, sprinkling with crumbled Feta cheese, a little grated rusk, and freshly ground pepper.
