Beet & Feta Pizza with Charcoal Crust

Charcoal is popular with diners for its cool look, perceived health benefits, and trendy appeal. This Beet and Feta Pizza features an activated charcoal dough full of subtle smoky flavour. It is topped with a vibrant mix of ingredients, including hearty pizza sauce, 27% Pizza Mozzarella Cheese, thinly sliced red and yellow beets, juicy grape tomatoes, and crumbled Feta Cheese. Add a drizzle of tangy balsamic glaze and chopped pistachios to finish off this social media-worthy pizza.

Ingredients

  • 1 each Charcoal Pizza Dough Ball
  • 75 ml Pizza Sauce
  • 100 g 27% Pizza Mozzarella Cheese Shred
  • 100 g Beets (red & yellow), boiled & thinly sliced
  • 100 g Grape Tomatoes
  • 75 g Feta Cheese Crumbles
  • 25 ml Balsamic Glaze
  • 25 g Pistachios, chopped

Charcoal Dough

  • 500 g Pizza Flour, Italian 00 (doppio zero)
  • 35 g Activated Charcoal
  • 1 g Fresh Yeast
  • 325 g Water, 37°C – blood temp
  • 15 g Salt

Directions

  1. For the crust: Mix the charcoal into the flour in a stand mixer with a dough hook.
  2. In a separate bowl, combine the yeast with water and whisk until activated, allowing the yeast to bubble in the water for about 10 minutes.
  3. Combine the yeast mixture with the flour, mixing to form a rough dough. Cover and let the dough rest for 20 minutes to hydrate.
  4. Sprinkle salt over the dough, knead in the mixer for 10 minutes until a smooth and stretchy dough is formed.
  5. Cover and let ferment at room temperature overnight.
  6. Shape the dough into the desired size, then proof for an additional 4 hours at room temperature.
  7. For the pizza: On a floured surface, stretch the dough to about a 20 cm round shape, then evenly spread the tomato sauce, leaving a 2 cm border around the edge.
  8. Add Pizza Mozzarella, thinly sliced beets, and grape tomatoes on the pizza.
  9. Bake until cooked – the cooking time will vary based on the oven type.
  10. After baking, sprinkle crumbled feta and pistachios on the pizza as a topping, then drizzle balsamic glaze in a zigzag pattern. Slice and serve.
