Phyllo-Wrapped Halloumi Stuffed with Pistachio

A taste of the Eastern Mediterranean with a Canadian twist! This mezze features Halloumi cheese stuffed with sweet figs and crunchy pistachios, wrapped in golden, flaky phyllo for the perfect balance of crisp and creamy. Served over a refreshing mint and Greek Yogurt sauce, it is a dish that sparks curiosity. A standout addition to any menu, it is an easy way to elevate appetizers and attract adventurous diners.

 

Ingredients

  • Mint Sauce:

    • 2 cups Packed fresh mint leaves
    • ½ cup Greek yogurt
    • ¼ cup Tahini
    • 1 tbsp Honey
    • 1 Lemon, zest and juice
    • 2 tbsp Orange blossom water
    • ½ tsp Kosher salt

  • Spicy Honey:

    • 1 cup Liquid honey
    • ¼ tsp Kosher salt
    • 1 tbsp Espelette pepper

  • Phyllo-Wrapped Halloumi:

    • 2 sheets Phyllo pastry
    • 4 tbsp Butter, melted
    • 235 g Halloumi
    • 1 fresh Fig, sliced in rounds
    • 1 tsp Spicy honey
    • 2 tbsp Pistachios, roasted and chopped 
    • Flaky sea salt
  • Assembly:

    • Mint sauce
    • Phyllo-wrapped halloumi
    • 2 fresh figs, quartered
    • 1½ tbsp Spicy honey
    • 1 tbsp Pistachios, roasted and chopped 
    • 5 Mint tips

Directions

Mint Sauce

  1. Add the mint leaves, yogurt, tahini, honey, lemon zest and juice, orange blossom water, and salt to a blender and blend until smooth, about one minute. 
  2. Pour the sauce into an airtight container and refrigerate until ready to use.
Spicy Honey

  1. Add the honey to a medium saucepot and bring to a boil. 
  2. Cook for 1 minute, then remove from heat.
  3. Carefully whisk in the salt and Espelette pepper and set aside to cool. 
  4. Store in an airtight container until ready to use.
     
Phyllo-Wrapped Halloumi

  1. Preheat the oven to 425°F and prepare a parchment-lined baking sheet. 
  2. Lay out 1 sheet of phyllo on a work surface, brush it with butter, and then repeat with a second sheet. 
  3. Cut the phyllo so you have a large square and place it in front of you with the points to the north, east, south, and west. 
  4. Cut the Halloumi cheese in half horizontally and place one piece in the middle of the phyllo pastry. 
  5. Lay the slices of fig over the Halloumi, then drizzle with honey. 
  6. Sprinkle the pistachios all over the figs, then place the other piece of Halloumi on top. 
  7. Fold the bottom of the phyllo pastry over the Halloumi, then brush it with butter and fold over the sides. Brush with more butter and fold the top over. 
  8. Flip the wrapped Halloumi over so the seam is on the bottom, and place it on the baking sheet. 
  9. Sprinkle the top with flaky salt and bake for 10–15 minutes until golden brown.
  10. Spoon the mint sauce all over a plate. Place the phyllo-wrapped Halloumi in the centre and place the figs all around. Drizzle the spicy honey all over and sprinkle with the pistachios. 
  11. Garnish with mint tips and serve.
