Chef’s tips: Neapolitan-inspired pizzas

Today, pizza is in the spotlight! Three-quarters of Canadians eat pizza at least once a month. With its thin crust and authentic taste, Neapolitan pizza will always be a winner in the heart of many consumers.1

So how can restaurateurs draw inspiration from this classic to attract more customers? According to Chef Beall, they can get creative and combine original cheeses with exciting new flavours!

Chef Chris Beall

When choosing your pizza cheese, you first need to decide whether you want it to melt or hold its shape. Feta and Haloumi cheeses stay fairly intact, which is great if you want some contrast in the presentation. As for flavours, pick something complimentary to bring all the ingredients together

Let’s find out how to reinvent the classic Neapolitan pizza with new ingredients and cheeses with these three inspirations!

Caprese Pizza

If your restaurant serves Neapolitan pizza, Chef Beall’s caprese is a must try to bring a twist to your classic! Fior di latte cheese’s delicate taste and texture perfectly balance out the bolder flavours of the tomato, basil, balsamic vinegar and Parmesan cheese.

Which other types of cheese would taste great on a caprese pizza? This pizza is all about the freshness of the ingredients. You could also use Bocconcini or any other mozzarella style fresh cheese, but remember to keep it simple.

Pizza Ratatouille with Goat Cheese

We’re continuing our culinary discovery with a Pizza Mozzarella and Soft Fresh Goat cheese combo, which Chef Beall uses for a ratatouille pizza! These cheeses pair perfectly with the zucchini, roasted tomatoes, eggplant, red onion, bell peppers and herbs.

What other cheeses would you recommend on a vegetarian pizza? Use the Pizza Mozzarella as a canvas for your recipe. You could pair it with Feta cheese.

Shrimp and Goat Cheese Pizza

Chef Beall gets creative with Soft Fresh Goat cheese crumbles for this pizza. He combines it with poached shrimp, sun-dried tomatoes, pesto and arugula.

You could also serve a decadent shrimp pizza with bacon, garlic butter, spicy tomato sauce and Pizza Mozzarella cheese.

As you can see, the sky's the limit when it comes to reinventing the Neapolitan pizza to create your new classic.
